Cocktails are made for improvisation!
Try a twist on the classic French 75 with Meyer lemons in place of the common variety and rose-hued Crémant versus Champagne.
Crémant is a luscious French sparkling wine with a less effervescent quality...think velvety bubbles...perfect for this chic libation.


  • 2 ounces dry gin (We love local Pacific Northwest-distilled Aviation Gin)
  • 1 ounce freshly squeezed lemon juice (preferably Meyer lemon)
  • 2 teaspoons sugar
  • Crémant (Pink variety or any dry Champagne)
  • Garnish: long thin lemon spiral 
  1. Fill cocktail shaker with ice. Shake gin, lemon juice, and sugar in a cocktail shaker until well chilled, about 15 seconds. Strain into a champagne flute.
  2. Top with Crémant (or Champagne). Stir gently, garnish with a long, thin lemon spiral.
